Whole Roasted Red Snapper with Hot Garlic Sauce

Hope everyone had a great weekend. Finally the weather here in Atlanta was nice. This past Friday I had a big dinner to make so I had to stop by Whole Foods to pick up a few last minute items. Now Whole Foods is not a place I just go there to get one item, I have to check what they have and as I passed the seafood section I noticed whole red snapper. Needless to say I picked one up on Sunday and made a whole roasted snapper.
Let’s cook!
Whole Roasted Red Snapper with Hot Garlic Sauce

1 whole red snapper, 4 pounds, scaled and gutted
1 bunch parsley
1 orange, thinly sliced
1 lemon, thinly sliced
olive oil
salt and pepper
1-1/2 cup olive oil
8 cloves of garlic, peeled
1/4 cup sheery vinegar
2 tablespoons smoked paprika
Preheat oven to 450. Place oranges and lemons in the cavity of the fish.

Now the parsley.

Drizzle olive oil and season with salt and pepper.

Place in the oven and cook for 35 to 40 minutes.

While the fish is cooking time to make the hot garlic sauce.
Place olive oil in a small pot over medium heat. Add garlic and cook until lightly brown (I forgot to take a picture of this sorry).
In a bowl add vinegar, paprika, salt and pepper.

Add the garlic and oil to the bowl and use an immersion blender to make smooth.

Once the fish is done pour sauce over the fish.

So the next time you see a whole red snapper, pick one up and try this!
