Hope everyone had a great weekend! This coming weekend Jen and I celebrate our one-year annivesary! We are headed up to a cabin and I will post the dinner I am making for her on Saturday. Speaking of Jen, she noticed the recipe and cooked dinner for me today. Now guys we all know there is nothing like coming home from work and having dinner at the table which happened tonight (I could smell the dinner when I pulled into the garage). This dish takes an hour and half which I was going to make while Jen was at tennis. I am also working on this recipe for the crockpot but will be a bit longer because I want to make it perfect before I post. So again, you have chicken breast and not sure how to cook it, try this!

Let’s cook!

Spicy Aromatic Chicken

4 chicken breast, with bones and skin

1/2 lemon, cut into wedges

4 tablespoons olive oil

1 onion, chopped

2 cloves garlic, chopped

1/2 cup dry white wine

14 oz can chopped tomatoes in juice

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon ground allspice

pinch of sugar

14oz can artichoke hearts, drained

8 black olives, pitted

Rub the chicken breast with lemon.

Heat olive oil in a large dutch oven.

While the oil is heating chop up the onion.

And garlic.

Add the onion and garlic to the dutch oven and cook for 5 minutes, or until softened.

Add the chicken breast and cook for 8 minutes on each side.

Add tomatoes and wine.

Add sugar, cinnamon, cloves, allspice, salt and pepper.

Bring to a boil. Cover with lid, and simmer for 45 minutes. Remove the lid and add artichokes and olives. Let cook for another 10 minutes.

Here is the pot of chicken cooked.

For this dinner Jen made wild rice which is one of my favorites. Now she did let me plate so here is how I plated the dish.

Here is another view.

Here is the close-up:

Jen did a great job and this recipe is one of my MUST TRY meals (I have lunch tomorrow too!)

Happy Cooking!

Wow, the blog has been up and running for two months and I can’t thank you all enough for checking it out and sending it to your friends and family. I really hope you enjoy the content and if you ever want me to add anything or if you have a cooking request please drop me an email at: thecookinghusband@gmail.com. Also, a big THANKS to Frank from Tech Jaws for his amazing support on this hobby of mine! If you enjoy my blog, please share it, spam it, promote it, link it… ok you get the idea.

Ok now to tonight’s dinner.

This is tender, fall-off -the-bone chicken! I love this recipe and meal because it is simple yet has AWESOME flavor. I also like it because Jen works from home and has to smell the dinner cooking slowly. Ok let’s get to cooking.

Whole Chicken with Spice Rub in the Crock Pot

4 teaspoons salt

2 teaspoons paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1 teaspoon thyme, chopped

1 teaspoon white pepper

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1 onion, chopped

In a small bowl, combine the above minus the onion.

Rub spice rub onto the chicken.

Put chopped onion in botton of the crock pot.

Add chicken to the crock pot and add no liquid at all! The chicken will make it’s own yummy juices.

Put the lid on the crock pot and cook for 8 hours on LOW.

The chicken will just fall off the bone but here is a picture right when I got home:

So the only thing I had to do to complete this meal was make a salad. Here is the finished product:

Now if you want a simple thing to make in the crock pot for dinner then try this and the clean up is a breeze.

Ok this Sunday I am going to make a pretty big meal and I will make HOMEMADE MASHED POTATOES because so many people have expressed their displeasure of my use of instant mashed potatoes on my steak dinner, and on other posts. For the first time, I had comments that I couldn’t even post because the remarks were not clean! Who knew people were so passionate about homemade mashed potatoes?? So I will make them, due to popular demand, and you will see why I don’t make mashed potatoes from scratch on the weekdays with my work schedule. Happy TGIF!

Happy Cooking!
