Spicy Shrimp Scampi with Pasta

1 box spaghetti
1 pound shrimp, peeled and deveined

			<content:encoded><![CDATA[<p>It has been one busy week already and it is only Tuesday! Tonight, Jen wanted pasta and spicy so I decided to make spicy shrimp scampi with spaghetti. For those that are looking for a quick dinner this post is for you!</p>

<p><strong>Spicy Shrimp Scampi with Pasta</strong></p>

<p>1 box spaghetti</p>
<p>1 pound shrimp, peeled and deveined</p>
<p>1 lemon, juiced</p>
<p>1/4 cup chopped fresh basil</p>
<p>1/2 cup cherry tomatoes, cut in half</p>
<p>3 tablespoons butter</p>
<p>4 tablespoons olive oil</p>
<p>1 shallot, diced</p>
<p>3 garlic cloves, minced</p>
<p>1-3 tablespoons red pepper flakes, depends how spicy you like it</p>
<p>1/2 cup dry white wine</p>
<p>salt and pepper</p>
<p>For the pasta, cook per the instructions on the box. Meanwhile, in a large skillet, melt 2 tablespoons butter and 2 tablespoons olive oil over medium heat.</p>

<p>Once the butter has melted and the oil is hot, saute the shallots and garlic for 2-3 minutes.</p>

<p>Add red pepper flakes and cook for another 2 mintues.</p>

<p>Add the shrimp to the pan and cook until they have turned pink.</p>

<p>Remove the shrimp and set aside.</p>

<p>Add lemon juice and wine to the pan and bring to a boil.</p>

<p>Add 1 tablespoon of butter.</p>

<p>When the butter has melted, add basil and tomatoes. Cook for 5 minutes.</p>

<p>Return the shrimp to the pan.</p>

<p>Add cooked pasta.</p>
