Crock Pot Chicken Gumbo

			<content:encoded><![CDATA[<p>The weather this weekend made me in the mood for gumbo! Not only did I want gumbo but while Jen and I did our errands on Saturday I wanted the gumbo cooking. So for all you that want a simple crock pot meal for the weekday this post is for you!</p>
<p>Let&#8217;s cook!</p>
<p><strong>Crock Pot Chicken Gumbo</strong></p>

<p>1 1/2 lbs boneless/skinless chicken breast, cut into cubes</p>
<p>10z bag sliced frozen okra, thawed</p>
<p>2 links andouille sausage, sliced</p>
<p>1 onion chopped</p>
<p>2 celery stalks, chopped</p>
<p>1 green bell pepper, chopped</p>
<p>1 teaspoon dried thyme</p>
<p>1 teaspoon dried oregano</p>
<p>2 bay leaves</p>
<p>1 teaspoon garlic powder</p>
<p>1 teaspoon mustard powder</p>
<p>1 teaspoon cayenne pepper &#8211; less if you don&#8217;t want it spicy</p>
<p>2 cups chicken stock</p>
<p>2 cups tomato juice</p>
<p>gumbo is perfect with rice so make white rice for this as well</p>
<p>In your crock pot combine the chicken, okra, onion, celery, bell pepper and andouille sausage.</p>

<p>Add the tomato juice and chicken broth.</p>

<p>Add thyme, oregano, garlic powder, mustard powder and cayenne pepper. Stir well to combine.</p>

<p>Top with 2 bay leaves and cover.</p>

<p>Cook on low for 6 &#8211; 8 hours or high on 3 to 4 hours. Serve over rice</p>
