Spicy Shrimp Scapmi with Pasta

It has been one busy week already and it is only Tuesday! Tonight, Jen wanted pasta and spicy so I decided to make spicy shrimp scampi with spaghetti. For those that are looking for a quick dinner this post is for you!

Spicy Shrimp Scampi with Pasta
1 box spaghetti
1 pound shrimp, peeled and deveined
1 lemon, juiced
1/4 cup chopped fresh basil
1/2 cup cherry tomatoes, cut in half
3 tablespoons butter
4 tablespoons olive oil
1 shallot, diced
3 garlic cloves, minced
1-3 tablespoons red pepper flakes, depends how spicy you like it
1/2 cup dry white wine
salt and pepper
For the pasta, cook per the instructions on the box. Meanwhile, in a large skillet, melt 2 tablespoons butter and 2 tablespoons olive oil over medium heat.
Once the butter has melted and the oil is hot, saute the shallots and garlic for 2-3 minutes.
Add red pepper flakes and cook for another 2 mintues.
Add the shrimp to the pan and cook until they have turned pink.
Remove the shrimp and set aside.
Add lemon juice and wine to the pan and bring to a boil.
Add 1 tablespoon of butter.
When the butter has melted, add basil and tomatoes. Cook for 5 minutes.
Return the shrimp to the pan.
Add cooked pasta.
