8 days till our due date! So to help speed things along tonight I made sausage rigatoni with a spicy vodka sauce. No eggplant tonight but that is for tomorrow. This is a VERY easy dinner to make and takes less that 30 minutes. For those of you that enjoy a spice kick this post is for you! For those of you that like rigatoni but don’t like spicy just change the sausage and don’t add chopped jalapeno.

Let’s cook!

Sausage Rigatoni in Spicy Vodka Sauce

1 pound hot turkey sausage, casings removed

1/2 onion, chopped

2 tablespoons olive oil

5 cloves garlic, chopped

1 jalapeno, finely chopped

1/2 green pepper, chopped

1 teaspoon paprika

1 teaspoon Italian seasoning

1 – 28oz can diced tomatoes with basil

1/3 cup vodka

1 cup heavy cream

1 pound rigatoni

1 cup grated Asiago cheese

2 tablespoons freshly chopped parsley leaves

Cook the rigatoni per the package instructions. In a large saute pan over medium heat add olive oil and sausage.

Cook until brown and be sure to break up large chunks with  a wooden spoon. Add onions, jalapeno and garlic and saute for 5 minutes.

Add green pepper, paprika, Italian seasoning, salt and pepper, to taste and cook for 5 minutes.

Add tomatoes to the sauce and simmer for 8 – 10 minutes.

Add the heavy cream.

Add the vodka.

Toss in the chopped parsley and mix well.

Time to get the dish assembled. Once you drain the pasta, place back in the pot and pour the sauce over the rigatoni and mix well.

Time to plate and top the dish with grated Asiago.
