Red Beans & Rice with Andouille Sausage plus Shrimp

Jen and I are back from the Dominican Republic and I thought for dinner tonight I would do something that brought us back to the beach. Now this meal takes 30 minutes exactly and I always like to change things up so let’s get to cooking!
Red Beans & Rice with Smoked Andouille Sausage plus Shrimp

1 box Zatarian’s Red Beans and Rice
1/2 package smoked andouille sausage
15 – 20 small raw shrimp
1/2 white onion, chopped
1 jalapeno pepper, chopped
Cook the red beans and rice per the package instructions. While that is cooking ,chop the sausage, onions and jalapeno peppers.

In a large pan, add onions and jalapeno over medium heat and cook until tender.

Add andouille.

Stir and let cook for 10 minutes. When you have 10 more minutes left before the red beans and rice to be done, add the shrimp to the pan.

Stir well and cook the shrimp for 7 – 10 minutes and remove from heat. Serve over rice and beans in a bowl. Here is how I plated:

So here is a simple meal that has a bit of a kick but if you don’t like spicy don’t add the jalapeno pepper. I finished the crockpot recipes for next week, which many people have requested. I am still in the process of updating the field trip part of the blog, but dealing with technical issues with pictures which I hope to have fixed by tomorrow night.

Sounds delicious! I would have to add some Tabasco or Louisiana hot sauce (and drink a beer too)! Now I’m getting hungry!
