Poblano Burgers with Guacamole Mayonnaise

Ever wanted to spice up that boring burger? This post is for you and guacamole mayonnaise helps to calm the heat from the poblano.

Poblano Burgers with Guacamole Mayonnaise
1/4 of a white onion
1 ripe Haas avocado, pitted and peeled
2 tablespoons mayonnaise
2 plum tomaotes, cored, seeded, and chopped
1/2 lime juiced
2 garlic cloves, grated
2 poblano chile peppers
1 1/2 pound ground chuck
salt and pepper
Grate the onion into a bowl.
Add the mashed avocado, mayonnaise, tomatoes, cilantro, lime juice, and garlic.
Mix well and season with salt. Cover with plastic wrap, pressing the wrap directly onto the of the guacamole mayonnaise surface, and set aside.
Preheat the grill on high. Grill the chiles.
Grill the chiles until the skin is blackened on all sides, about 10 minutes.
Peel off and discard the blackened skin, and then remove and discard the stem, and seeds. Chop the chiles into 1/2-inch dice.
In a large bowl add the ground chuck, chiles, salt, and pepper.
Shape into 3 – 4 patties. With your thumb, make as shallow indentation about 1 inch wide in the center of each patty. This will help the patties to cook evenly and prevent them from puffing on the grill.
Grill the patties for 8 – 10 minutes for medium.
Time make the burgers. Top the burgers with the mayonnaise and enjoy.
