Penne Pasta with Vodka Sauce

Tonight I made Jen’s favorite pasta and was shocked that I haven’t posted this yet. For those of you out there that love pasta with a vodka sauce, this post is for you. This complete meal takes 20 minutes and is perfect for that weekday dinner.
Let’s cook!
Penne Pasta with Vodka Sauce

1 lb Penne pasta
1/2 package of cooked Italian chicken
3 slices of Prosciutto
1 cup heavy cream
1/2 can of tomato paste
1/3 cup Vodka
2 tablespoons basil, slivered
4 cloves of garlic, peeled and sliced
handful of cherry tomatoes, sliced
1 tablespoon red pepper flakes
1/2 cup Parmesan cheese, grated
salt and pepper
Start a pot of water for your penne pasta. In a large frying pan over low heat, melt the butter with the cream.

In a bowl, add garlic, tomatoes, tomato paste and vokda.

Mix well and add mixture to pan.

Add the basil, red pepper flakes and salt and cook for 5 minutes (this is the time to put the penne pasta in the boiling water).

Add chicken and prosciutto and cook for another 5 minutes. The sauce is done with it coats the back of a spoon.

Add the cooked pasta to the pan.

Mix well to ensure penne is thoroughly coated and time to serve.

I am not a big drinker but I really think I could learn to love Vodka with this fantastic dish…
