Parmesan Stuffed Chicken Breast

Tonight I wanted to make a dish that was easy, but full of flavor for Jen’s dad who is in town visiting. I decided on Parmesan Stuffed Chicken Breast. This dish is very SIMPLE, and total prep time is less than 10 minutes. To complete the meal, add a side of spaghetti and a veggie!
Let’s cook!
Parmesan Stuffed Chicken Breast
4 bone-in chicken breasts
1 cup parsley leaves, chopped
1/4 cup dried bread crumbs
1/4 cup grated Parmesan cheese
1 lemon, zest
salt and pepper
Preheat oven to 450. In a small bowl, mix the parsley, breadcrumbs, Parmesan, and zest.
Loosen the chicken skin with your fingers. Tuck the parsley mix under the skin.
Season the top of the chicken with herbs de provence, salt and pepper.
Bake until the skin is crispy, and the chicken is cooked through.
Remove from the oven and let rest for 5 minutes before serving.
Time to plate!
