Homemade Potato Salad

I am a big fan of potato salad on a hot summer day! I am not a big fan of heavy mayonnaise potato salad and pretty much like it simple. Now if you buy store bought potato salad, well after you try this recipe you won’t need to do that anymore, and it is well worth the effort!

Homemade Potato Salad

3 pounds white potatoes
1 cup mayonnaise
1/4 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons whole-grain mustard
1/2 cup chopped fresh dill
1/2 cup red onion
salt and pepper
Peel the potatoes and place them in a pot of water with 2 tablespoons of salt. Bring the water to a boil, then lower the heat and simmer for 15 minutes. Drain the potatoes in a colander, then place the colander with the potatoes over the empty pot and cover with a clean towel. Allow the potatoes to steam for about 10 minutes. I had a picture of this but it was deleted on accent sorry.
While the potatoes steam in bowl, whisk together the mayonnaise, buttermilk, Dijon mustard, whole grain mustard, dill, salt and pepper. Let this rest.

When the potatoes are cool enough to handle, cut them in quarters. Place the cut potatoes in a large bowl.

While the potatoes are still warm, pour the dressing over the potatoes and add the red onion.

Stir well, cover and refrigerate for a few hours.
