Grilled Chicken Sandwich with Vinaigrette Dressing

I am one big fan of a grilled chicken sandwich. I am a bigger fan of a grilled chicken sandwich with a vinaigrette soaked in lettuce, blue cheese, oh and bacon!!! For the grill lovers out there, this recipe is for you!
Let’s cook!
Grilled Chicken Sandwich with Vinaigrette Dressing
4 chicken breasts, skinless & boneless (I cut in half)
6 strips bacon, thick cut
1/2 cup crumbled blue cheese
1 large beefsteak tomato, sliced
1 avocado, sliced
2 tablespoons red wine vinegar
1 lemon, juiced
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 clove garlic, chopped
1/4 teaspoon sugar
3 tablespoons olive oil
1 cup shredded lettuce
salt and pepper
Heat the grill to medium. Whisk together the vinegar, lemon juice, mustard, Worcestershire, garlic, sugar, salt, pepper and olive oil in a small bowl.
Cover and refrigerate for 30 minutes while you prepare the chicken. Place the strips of bacon on the grill and grill for 3 minutes on each side.
Remove the bacon to a plate lined with paper towels. Increase the grill to high.
Brush the chicken breast with olive oil and season with salt and pepper.
Grill until golden brown on both sides and cooked completely through, about 8 minutes per side.
Top the chicken with blue cheese, close the cover, and cook until the cheese has begun to melt, about 1 minute.
Place the lettuce in a medium bowl and toss with the vinaigrette.
Time to assemble the sandwich!
Place the chicken on the bottom of the bun and top with a slice of tomato, slices of avocado, 2 slices of bacon and dressed romaine. Here is the picture of it assembled.
