Flank Steak with Salsa Verde

To continue breaking in my new grill, I decided to grill some flank steak and serve it with salsa verde. Grilled veggies make a great side and this meal could be completed in 25 minutes!
Let’s cook!
Flank Steak with Salsa Verde
1 1/2 lb flank steak
3 cups parsley
3 scallions, chopped
2 tablespoons drained capers
1/2 lemon zest and the juice
2 anchovy fillets
2 cloves garlic
1 teaspoon dijon mustard
1/3 cup olive oil
salt and pepper
Preheat grill on high. Pulse the parsley, scallions, capers, lemon zest and juice, anchovies, garlic, mustard and olive oil in a food processor.
Pour into a bowl and season with salt and pepper.
Season the flank steak with salt and pepper.
Place on the grill and cook 5 minute per side and only turn one.
Remove the steak from the grill and let rest for 5 minutes before cutting (this is a good time to grill your veggies).
Thinly slice the steak against the grain and serve with the veggies and salsa verde! Here is the plating.
