Finishing Salts
Posted 01.21.2010 by Thomas in Recipes,
I have had several emails asking about the finishing salt I used for this week’sĀ salmon dish: http://www.thecookinghusband.com/mustard-and-herb-crusted-salmon/
This past Christmas, my wish list included finishing salts which is something I have learned about recently from a chef here in Atlanta. The trend with finishing salts has been growing among chefs and is beginning to make its way into the home kitchen. Depending on the variety of finishing salts, you can add flavor, color and texture to your dish based on the salt you are using.
Finishing Salts
The crystals are larger and most finishing salts are sea based with a variety of colors and flavors. There are tons of these salts but for us home cooks you might want to start with the basic three like I have, Black, Red and White.
Black for: grilled chicken, baked fish and steak
Red for: salads and grilled steak
White for: crusty breads, grilled fish
Where to find these salts? Williams Sonoma has a great selection or you can easily find them on Amazon. The above is a starter set which will cost about $24.
Happy Cooking!
