Crock Pot Chicken Gumbo

The weather this weekend made me in the mood for gumbo! Not only did I want gumbo but while Jen and I did our errands on Saturday I wanted the gumbo cooking. So for all you that want a simple crock pot meal for the weekday this post is for you!

Crock Pot Chicken Gumbo
1 1/2 lbs boneless/skinless chicken breast, cut into cubes
10z bag sliced frozen okra, thawed
2 links andouille sausage, sliced
1 onion chopped
2 celery stalks, chopped
1 green bell pepper, chopped
1 teaspoon dried thyme
1 teaspoon dried oregano
2 bay leaves
1 teaspoon garlic powder
1 teaspoon mustard powder
1 teaspoon cayenne pepper – less if you don’t want it spicy
2 cups chicken stock
2 cups tomato juice
gumbo is perfect with rice so make white rice for this as well
In your crock pot combine the chicken, okra, onion, celery, bell pepper and andouille sausage.
Add the tomato juice and chicken broth.
Add thyme, oregano, garlic powder, mustard powder and cayenne pepper. Stir well to combine.
Top with 2 bay leaves and cover.
Cook on low for 6 – 8 hours or high on 3 to 4 hours. Serve over rice

Looks good, but i must say i am really afraid of okra
