Crab Chowder

If you like clam chowder, your love this crab chowder! Since the weather is yet raining again tonight I figured this would be the perfect dinner with a salad. Total time to make is 35 minutes!
Let’s cook!
Crab Chowder
1 pound crabmeat
1 cup frozen corn
1 can crushed tomatoes
2 cups precooked potatoes
1 1/2 cup of water
2 – 14oz can chicken broth
2 teaspoons fresh thyme leaves
2 cloves garlic, minced
1 onion, diced
2 tablespoons olive oil
Heat oil in a large dutch oven over medium heat. Add onion and garlic. Cook for 5 minutes.
Add thyme, salt and pepper.
Add chicken broth.
Bring to a boil then add water.
Bring to a boil again and then add corn.
Add potatoes.
Bring to a boil and reduce heat to simmer and cook for 5 more minutes.
Stir in tomatoes.
Add crab meat.
Return to a boil and then turn off the heat. Let sit for 5 minutes before you serve.
